Best Fried Rice Recipe – Easy Chicken Fried Rice

What do you think of chicken fried rice? If you are one of those people who can only think of foods associated with their childhood (i.e.Pop Tart, S'mores, Macaroni and Cheese, etc.) you probably haven't had much experience with the somewhat forgotten and often passed over, Fried Rice. In this article I am going to share my best fried rice recipe, and hopefully entice you to give it a try sometime.

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 pound chicken cubes
  • 3 cups rice cooked
  • 2 Tbs sesame oil
  • 1 small onion chopped
  • 1 cup carrots and frozen peas thawed
  • 2-3 Tablespoons soy sauce to taste
  • 2 eggs lightly beaten

Instructions
 

  • Add vegetable oil and soy sauce in a large skillet or wok.
  • Add the chicken and cook until lightly brown and cooked. Remove it from the pan and set aside.
  • Pour sesame oil to the pan.
  • Add white onion and peas and carrots and fry until soft.
  • Push the onion, peas, and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once they are cooked, mix the eggs with the vegetable mix.
  • Add the rice and chicken to the vegetable and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until combined.
