That way, I only must turn the heat up a little bit when adding the liquids. You could also use a microwave safe frying pan for this; however I prefer the pan lightly burning on my fingertips. Some people enjoy lightly cooking vegetables in a skillet. But for my needs, the easiest and healthiest way is to use a frying pan with some oil, and a shrimp or chicken piece of breaded and cooked to perfection.

The key to making this Chinese inspired chicken fried rice come together perfectly is to use your creativity and use whichever vegetables you like. My favorite vegetables to use are cauliflower, onions, mushrooms, and shiitake mushrooms. Any of these will work great, however try to avoid using too many vegetables at once. Stirring occasionally will make the flavors meld together and keep the consistency soft and fluffy. If you’re going to make a traditional Chinese fried rice recipe, try using sesame oil instead of the oils mentioned above.

One of the best things about making this Chinese inspired fried rice at home is being able to control the quantity of ingredients that you use. In a restaurant, the chef may decide which ingredients go in what order. And this can lead to an overall lower quality dish. At home, you can control the amount of cabbage, onions, mushrooms, and shiitake mushrooms you use. Instead of using four cups of noodles in the above recipe, I used six cups, and the dish was just as delicious. In fact, many readers asked me how they can make fried rice that tastes better. So I am glad to share the secret with you.

When cooking this chicken fried rice recipe, I also learned that frying the noodles also releases the delicious sweet and sour flavors in them. Therefore, I added sugar instead of salt and reduced the amount of sugar in the mix. Because I was cooking this recipe for my family, the addition of canned fish and white beans did not hurt either. Just a couple of changes were made by substituting soy sauce for the oyster sauce. And adding nutritional info on the back of the can. So, I decided to also add a dash of lime juice to give it a tangy twist. And to help preserve the freshness of the onions and cabbage.

It does not take a lot of time or effort to make this easy fired rice recipe. I prepared the batter and wok ingredients, set the wok on a heat proof surface, and fried the rice in a very hot wok until it was translucent and set.   • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 pound chicken cubes
  • 3 cups rice cooked
  • 2 Tbs sesame oil
  • 1 small onion chopped
  • 1 cup carrots and frozen peas thawed
  • 2-3 Tablespoons soy sauce to taste
  • 2 eggs lightly beaten


  • Add vegetable oil and soy sauce in a large skillet or wok.
  • Add the chicken and cook until lightly brown and cooked. Remove it from the pan and set aside.
  • Pour sesame oil to the pan.
  • Add white onion and peas and carrots and fry until soft.
  • Push the onion, peas, and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once they are cooked, mix the eggs with the vegetable mix.
  • Add the rice and chicken to the vegetable and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until combined.
