My favorite vegetables to use are cauliflower, onions, mushrooms, and shiitake mushrooms. Any of these will work great, however try to avoid using too many vegetables at once. Ingredients
- 1 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 pound chicken cubes
- 3 cups rice cooked
- 2 Tbs sesame oil
- 1 small onion chopped
- 1 cup carrots and frozen peas thawed
- 2-3 Tablespoons soy sauce to taste
- 2 eggs lightly beaten
Instructions
- Add vegetable oil and soy sauce in a large skillet or wok.
- Add the chicken and cook until lightly brown and cooked. Remove it from the pan and set aside.
- Pour sesame oil to the pan.
- Add white onion and peas and carrots and fry until soft.
- Push the onion, peas, and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once they are cooked, mix the eggs with the vegetable mix.
- Add the rice and chicken to the vegetable and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until combined.
